Chris Squared Worlds Best Baked Hot Wings

Last night I recorded one of Bobby Flay's Throwdown episodes. If you have never seen this show, world famous chef Bobby Flay and the Food Network setup up the recognized expert for any given food into thinking they are doing a special on that person, and, at the last minute Bobby Flay shows up to challenge them.

Last nights food was Buffalo Wings, so, considering how much my son Chris and I love these I could not watch it without him. He came home around 10PM and we watched, and by the time it was over we both wanted to go out looking for wings!

Anyway, I decided that today I would make some wings using some of the methods Bobby Flay used. So, after I came home from work and exercised, I spent last three hours with my 18 year old son Chris. We went out shopping for ingredients and made the most AWESOME hot wings. We both agreed they were the best we have ever had. For him to think so for wings that were baked and not deep fried, well, that is really something! With my diet I just will not do fried foods!

As we sat down to dig in we noted they were perfectly cooked, fiery and spicy, but not overpoweringly so, with a hint of sweet and a touch of tangy, they were just incredible. Good thing I only made enough for the three of us (my 15 year old son would get woozy just looking at the sauce) or I would have eaten a lot more. I did not have any ranch dressing with mine, and the sauce was very low in calories.

Both my son and I could not believe my daughter Danielle ate these, with gusto, and is still alive! The best part of this was spending three hours with my son, doing something we both really enjoyed. Such times are rare, particularly as the kids grow older........

Here's a picture of the wings followed by how to make them:



The Chicken:
30 chicken wings, tips removed
Red Monkey Cajun Spice Rub
Freshly Ground Black Pepper
Sea Salt
Chris' Mexican spice (I make this out of half taco powder, half spicy chili powder mixed together)
butter flavor non-stick spray

Preheat oven to 350 degrees. Spray bottom of two glass rectangular Pyrex baking disks with non- stick spray. Place chicken wings in single layer in the bottom. Sprinkle lightly with all above ingredients, turn over and do the same to other side omitting the salt. Lightly spray surface of chicken with non-stick butter flavored spray.

Bake chicken for 10 minutes, remove and turn all pieces over and bake and additional 10 minutes. Start sauce preparation below. Once again turn the chicken over and Bake an additional 10 minutes for a total of 30 minutes. Remove chicken from oven and increase temperature to 500 degrees. Allow over to come to temperature and cook chicken for another 5 minutes. Remove, let cool for five minutes and toss generously with hot sauce. Serve with either Buttermilk Ranch or Blue Cheese Dressing. ENJOY!

The Chris Squared Hot Wing sauce:
1 Cup Franks Buffalo Wing Sauce
1 1/4 cup Franks Hot Sauce
1 half cup jarred chopped chili peppers (Samball Oelek)
6 cloves garlic, crushed
3 tbs red wine vinegar
1 tbs and 1 tsp honey

Combine and mix well the above ingredients into a large Pyrex measuring cup. Let sauce sit at room temperature for at least 20 minutes and then refrigerate until chicken is ready for the sauce.

Chris,

The wings sound and look wonderful! You have made me very hungry for hot wings, now! I believe I shall pick up some chicken wings on the way home tonight and make a batch tomorrow. YUM!
