Recipe:
South of the Border Chicken Nachos

I've been trying really hard before and after vacation to stick to the diabetic dietary requirements. Last night I wanted something good, without exceeding those. I created the following and was quite pleased with the results!

Ingredients:
1 pound frozen boneless skinless chicken breast tenders
1 cup white onion diced
3 tbsp water
1 tbsp crushed garlic (I used jarred here)
1/2 tbsp hot chili powder
1/2 tsp smoked paprika
1 tsp powdered cumin
1/4 tsp freshly ground black pepper
3 Slices fat free Kraft Cheddar Cheese
6 ounces Tortilla Chips (I used soy chips for less carbs and more protein)
PAM type Olive Oil Spray

Optional for topping:
Fat Free Sour Cream
Taco Sauce
Sambal Olek
Guacamole

Perparation:
Spray a non-stick saucepan with PAM spray. To bottom add water and crushed garlic. Add Frozen Chicken, and spray top lightly with PAM. Sprinkle on chili powder, paprika, cumin, and black pepper. Cover, and and simmer on very low heat for an hour.

Stir contents. At this point chicken should be soft enough (you used tenders, tight?) to break up. Using a wooden or plastic spoon press down on tenders until they break into smaller pieces.

Add chopped onion, cover, and again simmer on low heat for an hour. Remove from heat, add cheese, stir, cover and let sit for several minutes.

Arrange tortilla chips in a single layer on a large platter and then spoon chicken mixture on top. Add whatever else you like at this point such as guacamole, taco sauce, fat free sour cream, etc. I just topped mine sparingly with some Sambal for extra heat!

ENJOY! Serves four as an appetizer or two for dinner.
